Corn Salad Recipe, Care of CORNucopia

Here's another one I just learned from a food demo at the CORNucopia fest in Sleepy Hollow (going through Monday) - recommend! 

So simple, fresh and bright:

Cook a few ears of corn - boil, steam or grill. 
Cut the kernels off when cool.

Mix in big bowl with:

Mango chunks
Some diced red onion
Red, orange or yellow diced bell pepper
Black beans
Halved cherry tomatoes or fresh diced tomatoes
chopped fresh cilantro 
chopped cucumber

Toss with olive oil, juice of one lemon, salt and pepper

You could uses peaches instead of mango if you want to buy local fruit! Tried this on my family (a 3 and 5 year old and a hungry husband) and all loved it!
