This Saturday: Ossining Farmers Market will BEE Open!

Down to Earth Markets looks forward to seeing you this Saturday, February 8th, at the corner of Spring and Main Streets for our weekly farmers market.

Have you ever tried a Jerusalem Artichoke (a.k.a. "sunchoke")? If not, stop by John D. Madura Farms and ask about them. Miriam Haas, the lady who started the Ossining market way back when in 1991, describes them this way:

"Jerusalem Artichokes are the tuber attached to the root of a tall sunflower. Once you have some in your garden, you will either love or hate them. They are invasive and spread underground and you need to keep them in check by pulling up unwanted shoots in the spring. The stalks grow to be around 9 ft. tall ending in pretty sunflowers. Since they get so tall before flowering the birds get a better view of the flowers. After the flowers die, you can pull up the plants and look for the tubers."

The tubers are the edible part that you'll find this Saturday at the market. They are delicious roasted - like in this recipe.

The market has all sorts of seasonal produce, fresh fish, pasture-raised meats and chicken, breads, baked, goods, and much more!

This week, Hudson River Apiaries, makers of the most delicious honey around, will join the market, too.
