Sweet Potato Muffins

Ossining resident Caroline Curvan has a sweet potato muffin recipe—they'll never know you used Thanksgiving leftovers!

I never bother much with all those recipes that purport to help you find creative ways to repurpose your Thanksgiving leftovers.  Frankly, I'm perfectly happy eating turkey, stuffing, gravy and cranberry sauce for meal after meal until it's all gone. If I need a little change of pace, I'll just slap the above in a sandwich and call it different.

The only thing, though, that I don't enjoy as leftovers are sweet potatoes.  I always make that marshmallow sweet potato casserole thing, which is delicious on the day, but not so nice after.  But I hate waste, so . . .

 This year, I found the perfect solution.  Sweet potato muffins!  The marshmallow just adds a little extra sweetness and smokiness to the batter.  Herewith, then, is a basic recipe:

 Ingredients:

 2 1/2 cups whole wheat pastry flour (or just use all-purpose white flour)

1/2 cup sugar

2 teaspoons baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground ginger

2 tablespoons butter (melted)

3 tablespoons ground flax meal

1/4 cup oil (I like to use safflower, but any type is fine)

1 cup leftover sweet potato casserole

1 egg

1/2 cup buttermilk

Method:

Preheat oven to 350*.  Whisk together all the dry ingredients.  Blend all wet ingredients together in mixer.  Fold dry mixture into wet, mix until just combined. Fills 12 muffin cups.

Bake for 20 - 25 minutes, or until toothpick comes out clean.
